Romaine and Walnut Tacos

Romaine and Walnut Tacos

Oct 20, 2014 | Life

Raw tacos built on romaine leaves with a meaty walnut and sun-dried tomato filling, topped with a smoked paprika cashew cream. A recipe from a workshop with my raw chef mate.

Here is a delicious raw, living food tacos taken from a recent workshop I delivered alongside my raw chef mate, Jay Halford. This recipe makes four raw tacos.   Before assembling the tacos, the first step is to prepare the fillings.

Romaine and Walnut Tacos

Walnut and Sun-dried Tomato Filling

This has a delicious "meaty" flavour and will be the main filling for the tacos.

  • 100g Walnuts (unsoaked)
  • 50g sun-dried tomato (soaked for minimum of 3 hours)
  • 1 tomato
  • 1 clove garlic
  • 3 tbsp tamari
  • 1 tsp paprika

How to Make

Place in the walnuts in a high speed blender like the Optimum 9400 and blitz until broken down into fine pieces. Add remaining ingredients and pulse until blended. You may need to use the tamper to keep the mixture moving.
